You all have been so wonderful to me in the past. I am in desperate need of some help in making up a menu. The Owner is having a group of Men over for a poker game. I want food that can be set out so they can help themselves. My basic role is to have the food all prepared and set up, stay out of the way while the game is on and then clean up afterwards. I am really excited and want to show off my culinary talents but I have no idea what to serve since this is basically snacks (not dinner).

any suggestions would be greatly appreciated

Salsa and chips

egg rolls with sauces

peanut butter cookies

mini donuts

Go to any food site and you can find tons of recipes. If you want simple and effective then I say go for things that don't need to be hot or cold, don't need to be cut and served, just handy and available.

Yeah, like albatross said. Easy, no cutting, quick to pick up and wolf down. I'm partial to those little sandwich thingies, like you get at wedding receptions (ok, so I went to alot of cheap weddings *grin*). You can show off your culinary talents with those in terms of what you make to fill them, but they won't require you to hang around having to serve them.

Then again... why aren't you hanging around serving them?

Slices of submarine sandwiches.
Spinach artichoke dip and blue corn chips.
Triple chocolate cookies.
Salami, cheddar and crackers.
Crab dip with bruschetta.


Like LA said, anything handy, bite sized and non-fussy.

A really nice antipasto platter.
Some good provolone, sun-dried tomatoes, marinated mushrooms, Italian sausage, olives,
roasted red peppers.
Served with thinly sliced, lightly toasted, garlic rubbed Italian bread.

Ahhh, FINALLY! An area I have expertise in. I am to snack food as LA is to fetish fashion.

I am a big college basketball fan and have hosted lots of watch parties. My goal is stuff I can prepare ahead of time and then set out for 2-4 hours for snacking. You can go simple and easy or really show off a little.

For simple and easy I stick to the basics. Cans or bottles drinks on ice in a cooler. A crock pot full of some sort of hot dip (velveeta and beanless chili maybe) with veggies and chips available. Or a crock pot full of meatballs in a sauce of one bottle chili sauce, one small can tomato paste, and one can of beer. I also do a cold dip, like maybe a block of cream cheese with a can of salsa poured over it. Cheese and crackers. Gotta have some sweets. Brownies or cookies.

When I want to be fancier I have done all sorts of things. My experience is men watching sports or playing poker are not that appreciative a cheese foccacia wreath with garlic crab spread or the amaretto cheese cake with caramel drizzle. One thing I am often requested to make though is called cheesey bread.

Mix a package of cream cheese with a package of dry ranch dressing. Slice french bread most of the way through and spread with this mixture on like you would garlic bread. Then cut it almost all the way through lengthwise as well. Stuff with shredded cheese and then top with whatever. Tomatos, green onions, olives, chicken, jalepenos, etc. It makes it look pretty. You cover in foil and put it in the oven for about 12-15 minutes till it is all gooey and serve. It does cool down eventually, but still tastes good.

A giant sandwish made on loafs of french bread and sliced is always good too. I like pastrami, cream cheese, provolone, mustard, and tomatoes myself.

I could go on and on and on...

Menfolk? Poker?

Yeah, keep it simple.

Cold cuts are good with whole seed mustard available.

GOOD beer (not bud or coors) GOOD whiskey.

Chips, dip, those lil cocktail weenies.

Believe it or not, depending on the age of the men, even a small vegetable platter.

Alos have lighters and ashtrays available, plenty of ice, and plenty of paper towles for cleaning up things.

I can make suggestions on what not to have. Nothing that gets on the fingers like pizza. Card players want their cards clean.

You might look for things that can be eaten in one bite from a toothpick

I have a couple ideas from get-togethers past

Stuffed mushrooms
Leeks with walnut goat cheese (although they may not appreciate the work that this takes)
Mini sausages (these are easy, just get a package of lil links sausage, pour a can of beer over them in a small saucepan and boil the beer away, they are super-good)
Sugared pecans (again, they may not appreciate these)
Layered dip (one layer each of cream cheese, chili with no beans and motz. cheese, microwave until hot and the cheese is melted and serve with chips)
Nuts

mmmmmmmmmmm .. cooking, one of my favorite sports :)
here are a few suggestions.. the recipes are very simple, easy to make, and look and taste like more work than they are. all are finger type foods.

if anything interests you, e mail me for recipes.


mini empanadas- beef

mushroom garlic chicken cubes < served on toothpick>

asparagus wraps

spinach cheese balls

cold veggie squares

turkey sausage pinwheels- can use pork or beef if you like

stuffed mushrooms

bacon and tomato cups

grilled pepperoni pizza wraps

edited to add: JohnWarren is correct.. these recipes are finger and card friendly. one or two bite snacks, non greasy.

One of the guys in my Friday night poker group always brought a crockpot of his wife's homemade chili. It was a huge hit -- we looked forward to that almost more than the cards.

Besides, just add some chocolate chip cookies and you can do a play rape scene afterwards. at Sensualips.

Oh Michael...I have to disagree with you here. A glass of red wine has many health benefits. I've been told by my cardiologist to have a glass a night...not a bottle mind you, but a glass. It's great for the heart and cholesterol. Anything done in moderation and responsibly is fine.

Oh and spinach artichoke dip is just to die for.

Following my stroke and heart attack, I received exactly the same advice from my cardiologist and it was repeated by the physical therapist. It's ironic that I'm not a drinker and have to gulp it down because I do not like the taste... much to the horror of Libby who can carry on a five minute conversation with a sommelier, of which I understand maybe three out of five words.

Naturally, I don't touch her wine, but have my own "private stock, " of a different quality.
